Zuppa Toscana

We’ve been eating out so much lately that I have been craving some good home cookin’.  It was a particularly gray and blustery day out so it was perfect for soup!  I looove the zuppa toscana from Olive Garden but decided not to go for takeout because I wanted to make it a little bit healthier.  I found this recipe here and then added some of my own modifications.

Sliced baby red potatoes, kale and chopped yellow onions

add everything in

add some fresh cracked pepper and mmmmmmmm yum!

 

Some of the modifications I made to suit my taste were:
*use hot italian chicken sausage instead of regular italian sausage
*use turkey bacon instead of regular bacon
*use baby red potatoes with skin on
*use chicken broth instead of water and bouillon cubes
This is a pretty easy recipe that will definitely impress your tummy!

Camel

On my fall/winter shopping list this year is a camel colored coat.  The color goes with pretty much anything and is a nice break from the black and grays of the season. Here are a few that I would love to get my hands on.

Maybe I’ll be able to find one that is a combination of all 3 styles.

Today I am feeling a little grandma/grandpa-ish.

I love the elbow patches on the grandpa sweater and the collar on my blouse.  They are such fun little details.

Scholarly

A tweed blazer somehow always makes me feel a little more scholarly.  Here is one of my transition outfits for this season.  The tights gave me a little bit of warmth but the weather wasn’t too cool yet that shorts were out of the question and the scarf gave the outfit a splash of color since I’m not quite ready to let go of summer…

Leavenworth

This past weekend J promised to take me to Leavenworth so we invited another couple to come with us.  Leavenworth is a little Bavarian themed village in Washington but my main reason for this trip was to go to a mexican restaurant there plus, the beautiful scenery on the way makes for a very scenic drive.

I didn’t take a photo of the restaurant but if you are ever in Leavenworth it is definitely worth a try.  The place is called Los Camperos and I order the Camerones al Mojo de Ajo (prawns and mushrooms sauteed in a spiced butter garlic sauce with rice and beans).  Delicious!

I did however spend all day eating and I loved every moment of it.

Leavenworth is a year round destination and only about 2 hours away from Seattle.  There are wineries, orchards and always a festival or two happening.  If you decide to make the trip out there…go on an empty stomach because you will definitely be stuffed by the time you leave.
